Amaranthus cruentus, or Amaranth, is a self-seeding grain native to the Americas that has been harvested for centuries for making dye and cooking. You can harvest seeds, flowers, and spinach-flavored foliage for a vast array of culinary and craft uses. This multi-use annual also makes for a stunning ornamental. Sow seeds indoors 6-8 weeks before the last frost, transplanting outdoors in a sunny location 12-18" apart after the danger of frost has passed.
